Hello! The goal of the soaking step is to soften them ever so slightly. They won’t be completely soft, like canned chickpeas. They’ll still have some bite or crunch when you add them to the food processor. If you have soaked for 18-24 hours, they should be good to go!

Hi, Joan. You can add 1 to 1 1/2 tbsp of flour to the falafel mix or 1 egg to help bind things together if you’re having issues there.
