This recipe was so easy to throw together, and the flavors were perfect. I didn’t have halibut available to me, so I used cod. I can’t wait to try it again with Halibut. This recipe is being added to our family menu!

This is possibly my favorite recipe. It never goes wrong, adapts to other vegetables and is cooked in under 20 minutes. It’s like a trip to the Mediterranean.
