Here&rsquo;s what you&rsquo;ll need to make it:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Fresh basil leaves<\/strong> &ndash; You&rsquo;ll need 2 cups packed sweet basil leaves (about about 1 1\/8 ounces)<\/li>\n\n\n\n<li><strong>Shallot<\/strong> &ndash; Shallot adds a hint of sweetness and a delicate sharpness.&nbsp;<\/li>\n\n\n\n<li><strong>Garlic<\/strong> &ndash; One clove provides just enough of a spicy kick.&nbsp;<\/li>\n\n\n\n<li><strong>Fresh lime juice and white wine vinegar<\/strong> &ndash; They add acidity to this basil vinaigrette, which brightens the flavors and makes each ingredient shine. Lime juice also helps keep the basil bright green instead of army green (more on this below).<\/li>\n\n\n\n<li><a href=\"https:\/\/shop.themediterraneandish.com\/product-category\/olive-oil\/\"><strong>Extra virgin olive oil<\/strong><\/a> &ndash; A robust EVOO like our <a href=\"https:\/\/shop.themediterraneandish.com\/product\/early-harvest-extra-virgin-olive-oil\/\">Early Harvest Greek extra virgin olive oil<\/a> is a good option here, with its pungent, peppery notes.&nbsp;<\/li>\n\n\n\n<li><strong>Red pepper flakes<\/strong> &ndash; If you want a milder option, use <a href=\"https:\/\/shop.themediterraneandish.com\/product\/aleppo-pepper-aleppo-style-pepper\/\">Aleppo pepper flakes<\/a> instead.&nbsp;<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-how-to-keep-pesto-vinaigrette-bright-green\"><strong>How to keep pesto vinaigrette bright green!<\/strong><\/h2>\n\n\n\n<p>Pro tip: Blanch the basil. One of the main complaints I hear about basil, whether in <a href=\"https:\/\/www.themediterraneandish.com\/basil-pesto-recipe\/\">homemade pesto<\/a> or other sauces, is that it quickly turns from bright green to a dingy, army green color when it is blended.&nbsp;<\/p>\n\n\n\n<p>This happens because of oxidation, and an easy workaround will give you vibrant green basil salad dressing every time: Blanch the basil first. Blanching kills off the decomposing enzymes that turn basil that green-brown color. And it takes mere seconds to do! Here&rsquo;s how to blanch basil:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Prepare a pot of boiling water and a bowl filled with ice and water.&nbsp;<\/li>\n\n\n\n<li>Place the basil leaves into the boiling water for 5 to 10 seconds, then quickly transfer it to the ice bath with a slotted spoon or a pair of tongs.&nbsp;<\/li>\n\n\n\n<li>Before you use the blanched basil, wring it out thoroughly in some paper towels so the leaves aren&rsquo;t soggy.&nbsp;<\/li>\n<\/ul>\n\n\n\n<p>Another quick tip to stop basil leaves turning brown is to add citrus. Lemons, limes, etc., contain citric acid and ascorbic acid, both of which help to prevent oxidation. Season with kosher salt to taste and store in a tightly closed Mason jar in the refrigerator.&nbsp;<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-how-to-use-pesto-vinaigrette\"><strong>How to use pesto vinaigrette<\/strong><\/h2>\n\n\n\n<p>The great thing about basil salad dressing is that it is wonderfully versatile. It is an easy way to elevate salads, from <a href=\"https:\/\/www.themediterraneandish.com\/summer-pasta-salad\/\">Summer Pasta Salad<\/a> to more American-style lettuce salads to even <a href=\"https:\/\/www.themediterraneandish.com\/watermelon-salad-with-cucumber-feta\/\">watermelon salad<\/a> for a savory kick. <\/p>\n\n\n\n<p>This basil and white wine vinaigrette can also be used as a zippy sauce, perfect to dress up some flaky <a href=\"https:\/\/www.themediterraneandish.com\/how-to-grill-salmon\/\">grilled salmon<\/a>, a whole <a href=\"https:\/\/www.themediterraneandish.com\/mediterranean-whole-roasted-red-snapper-recipe-with-garlic-and-vegetables\/\">baked fish<\/a>, and <a href=\"https:\/\/www.themediterraneandish.com\/baked-chicken-drumsticks\/\">lemon garlic drumsticks<\/a>. It will keep for up to 4 days. Give it a good shake before you use it again. <\/p>\n\n\n\n<p>To save this vinaigrette for a burst of sunshine in the winter, you could also freeze it in ice cube trays. To thaw, simply pop a few cubes into a Mason jar and place it in the refrigerator.
