When I set out to make this Greek Gyro Bowl, I wanted all the good parts of that golden slow-roasted meat, but with a lighter and more fuss-free approach.&nbsp;<\/p>\n\n\n\n<p>The trick to making lean, healthy protein as juicy as the 2 a.m. street gyro situation is a really good marinade. And this Greek yogurt marinade pulls double-duty, tenderizing the meat while infusing it with a big Mediterranean flavor that never disappoints. It&rsquo;s delicately spicy, slightly earthy, very aromatic, and, of course, boldly garlicky and tangy!&nbsp;<\/p>\n\n\n\n<p>Plus, serving the tender chicken with <a href=\"https:\/\/www.themediterraneandish.com\/traditional-greek-salad-recipe\/\">traditional Greek salad<\/a> means it&rsquo;s low-carb, super fresh, and filled with healthy nutrients and vibrant texture. Cayenne pepper is optional, but it will add a nice kick if you&rsquo;re into spice.&nbsp;<\/li>\n\n\n\n<li>Kosher <strong>salt<\/strong> and black <strong>pepper<\/strong> enhance the flavor.&nbsp;<\/li>\n\n\n\n<li><strong>Extra-virgin olive oil<\/strong> enriches the meat. Choose a high-quality extra virgin variety&ndash;any of the oils from our shop would work well, but I love the richness of our <a href=\"https:\/\/shop.themediterraneandish.com\/products\/koroneiki-greek-organic-extra-virgin-olive-oil\">Greek Koroneiki<\/a> with this recipe.&nbsp;<\/li>\n\n\n\n<li><strong>Chicken tenderloin: <\/strong>These small, delicate strips of breast meat are lean yet incredibly tender. I buy a bag at my store labeled &ldquo;<strong>chicken tenders<\/strong>&rdquo;&ndash;though you&rsquo;re not looking for the breaded kind.&nbsp;<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-for-serving\"><strong>For Serving<\/strong><\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li><a href=\"https:\/\/www.themediterraneandish.com\/traditional-greek-salad-recipe\/\"><strong>Greek Salad<\/strong><\/a><strong>: <\/strong>Crunchy, fresh and bright. And you can make the Greek Salad and Tzatziki while the chicken soaks (each takes about 10-15 minutes), or prep those a few days in advance. Here&rsquo;s the play-by-play:<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-get-ready\">Get Ready<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Make the marinade.<\/strong> Mince 3 garlic cloves and add to a large bowl. To the bowl, add 1 cup plain Greek yogurt, 2 tablespoons red wine vinegar, 1 tablespoon dried oregano, and 1 teaspoon each of paprika, cumin, and coriander. Finish with a big pinch of salt and pepper. If you&rsquo;re okay with a little heat, add a pinch of cayenne. Add the juice of 1 large lemon, and a good drizzle of olive oil (about 2 tablespoons). The Greek salad will last up to 2 days, just wait to dress until just before serving.<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-cook-and-assemble\">Cook and Assemble<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Cook the chicken. <\/strong>Heat about 1 tablespoon of olive oil in a nonstick pan over medium-high. Shake excess marinade off the chicken. When the oil is ready and shimmering, arrange the chicken in one single layer in the pan. Cook on one side until browned (about 4 to 5 minutes), then turn over and cook for another 5 minutes or until the chicken is fully cooked through to 165&deg;F and its juices run clear. To each bowl, add Greek salad, tzatziki sauce, and a few pita wedges if you&rsquo;d like.
